Generally the only difference is breathability. Nylon gaiters are lighter, and cheaper, but do not breathe at all. Canvas gaiters are heavier and on the more expensive size, but are breathable and are able to be worn in a large range of temperatures and conditions.

These gaiters aren't specifically designed to offer snake protection. We'd recommend a thicker full-length canvas gaiters to provide some degree of protection.

That sounds like a great trip! These Spinifex gaiters are made out of a heavy duty ripstop Nylon material that is technically water resistant but certainly not proofed (meaning no water can pass through at all) and considering that there's a hole at both the top and the bottom of the gaiter, it's hard to call anything in this range fully waterproof.
They will repel a certain amount of water for some time but if you're walking through a lot of wet grass for prolonged periods of time, I would suggest one of the lined options like the Quagmire gaiters which have a waterproof breathable membrane bonded to the outer material. They are slightly heavier and longer so it is a compromise, however, they will keep your pants dry whereas the shorter Nylon Spinifex option may or may not.

I take a US size 13 hiking boot. Have you had any issues with these fitting over large boots or on large sized people? What are the advantages of the canvas vs nylon versions?

You shouldn't have any trouble getting these gaiters over your boots as they open up and can be wrapped around your boots and then closed using the velcro tab.Â
A few benefits of canvas are that they are a more natural fibre, so they will breathe a little better and may be a bit more durable when you're walking through rougher terrain.Â
Nylon gaiters are going to be more lightweight, so they're great for hotter conditions where you want to wear shorts but still protect yourself from scrapes, insects, bites etc.Â
