They'll both do the same thing in terms of performance, the difference mostly being that canvas is known to be more breathable and better for summer conditions than nylon.
If its wet and muddy, there's no real difference, so make your decision based on budget and weight requirements if releveant, or if you intend to use your gaiters for other trips in the future and will be in dry hot conditions.
Hi, I was curious as to what keeps the product up on the calf with extended walks or light jogging. Given the calf tapers down is there a risk of it slipping down and needing regular adjustment?

If you have these on you should be able to adjust this sung with your leg, there is a drawstring at the top to help keep this in the right spot, you shouldn't need to adjust this very often.
