Yes, the flat top pegs will do the trick for anything that doesn't specifically need the hook for the guy rope.

Just wondering if these are suitable for use with a ground mat? Are the rubber washers soft and compress easily without risk of damaging the mat? Do they sit high enough that they are a potential trip hazard?

You could certainly use these to secure a ground mat, however, there will be approximately 3cm of washer and head protruding at the top so it could be a bit of a trip hazard. The washers are quite solid and won't really compress.
