Including mounting rails you are looking at a total packed height of 210mm (21cm).
Is this tent suitable for cars with 2 bar roof racks?

Unfortunately not - due to the lightweight nature of this tent, 23Zero advise it needs to be installed on 3 cross bars, or a platform roof rack.
Most roof rack brands offer a single bar option to add to your existing racks, hopefully that still works for you.
Can a 23zero 270â° awning be fitted to the side of this tent also?

No, it can't. You'd install the 270 awning to the roof racks on your vehicle, and then install the roof top tent over the top.
Thats the standard way to run that combo, theres not too many roof top tents that you can directly install an awning too.
They tend to be the much more heavy duty options.
Hi, would any of the self-inflating mats you stock fit in this tent? ideally the exped mega mat duo?

The sleep area of this roof top tent is 206L x 120w. Most of the double mats, including the Exped Mega Mat Duo are standard size 132cm wide. So they would fit, but be a bit squishy. Please note, you can use a self inflating mat whilst the RTT is in use, but you cannot store the mat in the RTT while not in use.
