Looking to pair this with a new hardkorr heavy duty solar mat MK2 and wondering what will be suitable. Will the 200w solar mat Be enough and would you recommend purchasing with the optional/included 15A smart regulator or purchasing with the 30A?

Yes, this battery will pair with the Hard Korr Heavy Duty Solar Mat 200W MKII. 200W should be a good option for top-up charging of this unit, but if you want more solar generation then you could get a second set. The 15A regulator should suit, but if you opted for a second set of 200W panels you'd need to get the 30A regulator.
How Does the Bluetooth work to respond to 2 Batteries in parallel? Will it identify 2 batteries connected in parallel?

I've just heard back from HardKorr on this - the app will read the two separate batteries, with the % and Amps being fairly reliable, but the voltage may not.
The app doesn't have a setting for reading the parallel batteries as a singular, but you should still be able to get decent info.
Battery is in the Hard Korr battery box, box has 4 Anderson plugs. On cloudy days when there's little power being produced, can another solar panel be connected ?

Let's put a little light on the situation for you. You can run 2 panels, Yes. You'll need a few extra things, the first one being a pair of MC4 multibranch connectors which you can pick up from Jaycar here, and the second being an MC4 to Anderson cable which you can find here.
You'll just need to plug the positive cables from both panels into the positive/male multibranch connector and do the same with the negative cables - have a look at this diagram as an example.
These multibranch connectors will then plug into the anderson cable, and away you go!
This will keep your panels at 12v but double the Amps, so make sure your charge regulator is rated to 30A.
I believe that a new lithium battery has to be fully charged before use. Is the Hard Korr 200 watt heavy duty solar panels be OK to do this ? (With battery box and regulator)

Bringing it up to 100% (or very close to it) is a good idea as most batteries are shipped with a 35% residual charge. There's no need to keep it on for extended periods as some people believe. Solar panels will charge it up no worries, theres a charge regulator which will feed the battery what it needs, so on a day of good clear sun you may only need to have them out for 5-6 hours to get your battery full.

You can charge any stand alone battery with 240v, as long as you have a 240v battery charger that has a charge program that works for your particular battery chemistry.
Most battery chargers have both Lead Acid and Lithium charging programs these days.
We do not actually sell 240v battery chargers but you should be able to track one down without too much of an issue. Aim to find one with a charging capacity of around 10% of the battery you're charging. Eg. 100Ah battery = 10Ah 240v battery charger.

This battery is rated to 135A continuous output so 135A x 12v = 1620W is the potential output.
1500W inverters are a common size thats closest to the max potential of this battery.

No, you cant. Most vehicle's engine bays routinely run temperatures well in excess of safe operating temps for this battery, so running it under the hood will cause significant damage.
What’s the black cable for in the photo on your site ?

The black cable is a remote reset switch. This can be used if the low voltage disconnect happens at 10V, you'll need to reset the unit to be able to charge it up again. You can get all the extra details and a user guide on the Hard Korr website here.
