The freeze-drying process is different to dehydrating food. Basically, the food is frozen and frozen crystals are evaporated from the food in a vacuum, this leaves the food completely dry. What's even better is that as this ice is evaporated from the food, it leaves small pores that enable it to be re-hydrated quickly - just about all of these meals can be prepared with hot water in under 10 minutes.
