G'day Amanda,
It would be possible to do an overnight hike with a Deuter Futura 28 SL but you'd need to have the smallest little tent, sleeping bag etc. I'd recommend looking at something 40-50L capacity for overnight hikes if you want to carry enough gear to be comfortable, especially in winter when you'll need to carry more clothing. Take a look at the Deuter Futura Pro 38 SL or the Deuter Aircontact Lite 45 10 SL. It's always worth buying something a bit bigger than you think you'll need because your next trip might be longer. You can always make a bigger bag smaller but if your bag is too small you can't really make it bigger.
