Will this work on my Coleman big sky regular or my oztent stretcher or would the springs on coleman or edges of the oztent stretcher rip the underside fabric.

A self inflating mat & stretcher combo is probably one of the most common sleep systems you'll find amongst campers. Whilst there's no issues using this mat with a stretcher, I'm not 100% sure on the Big Sky bed - we've not heard much feedback on these. I can't see there being a problem really, the only consideration would be if the springs on the edge pinched the mattress fabric. It's not a big deal with the original foam mat, but if you catch a self-inflating mat & it tears, you'll need to patch it up. If you do use if with your Big Sky Bed, just be mindful of that. Yes, the Fatmat Lite and the Easy Fold Single Stretcher are a great combination. The mat is a little narrower than the stretcher, however, this won't be a worry.

Does the valve allow you to blow in some extra air to make it firmer, like the red comfort bonded mattresses do, or is this not necessary because the memory foam expands enough to make it firm?

Yes, you can add additional air if you require a firmer mattress, but you need to do that manually and not with an electric pump. Any over-inflation can tear the bonding between external fabric and foam, so manually pumping it in will ensure that doesn't happen.
