Yes, the Fatmat Lite and the Easy Fold Single Stretcher are a great combination. The mat is a little narrower than the stretcher, however, this won't be a worry.

Does the valve allow you to blow in some extra air to make it firmer, like the red comfort bonded mattresses do, or is this not necessary because the memory foam expands enough to make it firm?

Yes, you can add additional air if you require a firmer mattress, but you need to do that manually and not with an electric pump. Any over-inflation can tear the bonding between external fabric and foam, so manually pumping it in will ensure that doesn't happen.
