I'd recommend a pole like the Oztent Alloy Pole for your Oztrail 3 Metre Multi Purpose Wall Awning. It's adjustable, so you can set it to whatever height you need!

Unfortunately, there is no lining in the Oztrail 3 Metre Multi Purpose Wall Awning designed for heat.

You should be able to make this configuration work. It won't be a perfect fit and there will be some limitations, but I definitely wouldn't say it can't be done. The biggest limitation will be with attaching the walls at the top to the gazebo. I'd recommend using the velcro tabs across the top to attach the multi-purpose wall, meaning that the mesh wall will likely have to hang a little loose. With a bit of initiative and creativity - you should be able to come up with a way to make it possible though.

I've just checked with the info provided by Oztrail, and the 3 Metre Multi Purpose Wall Awning only comes in one colour - which is white.

It attaches to gazebos with hooks and velcro so I don't see why it couldn't be used on another 3x3 gazebo if those connections are suitable.

I can't see any reason why not, although as you said you would need a way of attaching it to the second gazebo, cable ties should do the job nicely!

The only thing I would worry about is rain - given that it's a flat surface if it rains the water is going to pool on top and ultimately collapse, drenching anyone underneath and possibly damaging itself in the process!

I think in fair weather when you want some extra sun protection it will be fine, but give it a miss if it looks like rain.
