The only windshield for hiking stoves we have is the Companion Pro Nano.
will this take jetboil 227 and 450 or gasmate 230g lindal valve?

Yes, this is a Lindal valve stove, so will take a gas cannister of any brand that has this connection.

The MSR Pocket Rocket Stove is compatible with any brand of Isopro (meaning isobutane/propane mixed) fuel canisters with a Lindal Valve attachment.
Can it hold the weight of 2.8 litres?

MSR specifies a maximum weight of 3.6kg, so a full 2.8L X pot shouldn't be a worry. We'd just suggest using a fuel can stabilser to widen your base of support with a large pot like this.

What size pan fits best - I have an 8†â€fry pan - would that work?

Your 8" frypan should work fine on an MSR Pocket Rocket 2. I just tested the GSI Bugaboo 8 Frypan and it was fine, but I probably wouldn't go any bigger.
