G'day Pete,
I've just gone and measured the bladder pocket in the McKinley 85L and it is about 39cm x 18cm so it won't quite fit a 3L bladder in any of the brands we sell. Interestingly the 2L Blackwolf bladder also doesn't fit the pocket as Black Wolf has redesigned their bladders with a handlebar down the centre, this makes them too long to fit. You'd be able to fit a 3L bladder just in the top of the bag though if you were doing that though I would recommend something like the Camelbak Unbottle design which will give a little more protection to the bladder.

Not with the McKinley sorry Douglas, it is primarily a trekking pack so the harness will always be exposed. You could use a pack protector such as the Black Wolf Overall (search product code 22264 on our site), or the large plastic bags they often supply at airports.
