can they be carried safely lying on their narrow side instead of standing upright without a risk of leaking

They have a pretty good seal on them so we think they should be ok horizontally, however just keep an eye on them in warmer weather or when the pressure changes a little to make sure they don't leak at all.
What is the diameter of opening size at the smallest point? Will the Jerry can accept hi-flow diesel nozzles (32mm diameter)?

I've measured the opening at the smallest point and it is 28mm, so unfortunately you won't be able to fit a high flow fuel nozzle into the opening.
